Bone Broth Recipes - HAPI Chicken Saloona - 
We created few clever and tasty ideas and recipes using Bone Broth will help you get more of this nutritious food in your meal plan every day.

Serves 4-6

 

Ingredients:

6-8 Fresh Chicken Thighs
2 Litres HAPI Bone Broth - Chicken Stock Saloona Spices Mix Powder
400g Potato, peeled
100g Carrot, peeled
200g Small Sized Tomato
50g Spring Onion
25g Fresh Parsley
2 Fresh Limes
Seas Salt to taste

 

  1. Cut potato and carrot into approximately 3 x 3 cm pieces, keep aside.

  2. Preheat oven on 200C, place chicken thighs in one later in a large baking dish, and

    roast in preheated oven at 200C for 20 minutes.

  3. Once finished remove the cooked chicken thighs using tongs and keep aside – keep

    juices and melted chicken fat inside the baking dish.

  4. Place the cubed potato and carrot in the baking dish with the chicken juices and fat,

    mix well and roast in oven for 10 minutes, then remove and stir well - and roast

    again for another 10 minutes.

  5. Remove the hot baking dish with potatoes and carrot from the oven, sprinkle 1

    tablespoon of Saloona Spices Mix powder and stir well. Once cooled, remove the

    marinated potato and carrot from the dish and place in a large sauce pot.

  6. Use a splash of HAPI Bone Broth Chicken stock to scrape the browned spices flavour

    and pieces from the baking dish and place all of this into the large sauce pot with the

    potato and carrot.

  7. Add the remaining Chicken Stock to the pot with potatoes and carrots - and place on

    high heat. When it begins to simmer, lower the heat and allow to simmer for 30

    minutes.

  8. After 30 minutes, add the chicken thighs and fresh tomato to the pot and place on

    high heat again. When it begins to simmer, lower the heat and allow to simmer once

    again for another 15 minutes.

  9. In the meantime, finely chop the fresh parsley and slice the spring onion, keep aside.

    Cut the lime into wedges ready for serving.

  10. When the Saloona has finished simmering, add salt to taste – approximately 2-4

    teaspoons, mix well and taste again. Repeat this adding extra Saloona Spice mix to

    your taste.

  11. Once seasoned to your liking, switch off the heat and add the freshly chopped

    parsley and spring onion – stir well, and cover the pot ready to serve.

  12. Serve the Chicken Saloona hot, with lime wedges in the side and with fresh warmed
